Eating healthy has always been given a bad wrap in todays day & age. We associate it with attempting to lose weight and pretending to like food that has just as much flavor as a cardboard box — never as a pleasant addition to our daily lives.
I stumbled upon a restaurant a few blocks from where I work called Dig Inn, where “everything is good for you, so dig in!” The line at lunch is out the door every day and for a good reason. Dig Inn has managed to fill their menu with items that are not only fresh and locally-grown and produced, but are loaded with the widest varieties of flavor.
However, what really sold me was the Vanilla Mint Iced Tea. One problem that us Southerns face when living in the North is the absence of Sweet Tea, and I would never be caught dead drinking regular iced tea. But the Vanilla Mint Tea has become a beyond exceptional substitute for my usual Sweet Tea cravings (see recipe here.)
